Canton Bistro is more than just a restaurant—it is the result of a journey filled with resilience, determination, and a deep love for food. Chef Chuong Ly (Lee), the heart behind Canton Bistro, was born in Hanoi, Vietnam. At just 14 years old, during the Vietnam War, he and his family fled by boat across the South China Sea. The journey was dangerous, lasting two months, with 80 people aboard a handmade boat. Food was scarce, and survival was uncertain, but hope pushed them forward.

After arriving in Guangdong (Canton), China, Chef Ly and his family were taken to a refugee camp in Hong Kong. It was in this challenging time that he found his passion for cooking. He was sponsored to work as a food prep in a local restaurant, where he watched the head chef skillfully prepare dishes. The art of cooking fascinated him, and he dedicated himself to learning every technique, from mastering the knife to working the wok.
